Our story: Sad Les Med

A story that begins in the silence of Vysočina

Gathered in quiet corners of Vysočina, our honey brings together an ancient beekeeping craft and uncompromising purity. We aim to reveal the true strength of the living enzymes nature places in every drop. Our entire process, from blossom to jar, is a journey towards a raw artefact that brings the energy of the landscape to your table in its purest, unaltered form.

Vladimír at the hives
A true guardian of tradition

SAD LES MED rests on the firm foundations and life philosophy of its founder. For Vladimír Mařinec, the integrity of the raw ingredient matters more than convenience in processing. At a time when honey has become an anonymous commodity on shop shelves, he believes in taking the opposite path. With precision in every detail, he preserves honey in its living state, without the high temperatures and filtration that would destroy its biological value. This honesty is present in every step of processing and every jar bottled by hand.

Origin and terroir

We do not depend on anonymous sources. We place our hives where the bees can enjoy absolute peace, rather than where it is convenient for us — in secluded spots around Bratřice and in the forests below Stražiště hill. Miles of wild meadows and woodland form a natural barrier against the bustle of the modern world. This deliberate seclusion in the unspoilt countryside of Vysočina, combined with the altitude, granite bedrock and nearby peatlands, gives each batch its distinctive mineral character. It is a rare seasonal gift that cannot be hurried and that industrial blends will never offer.

Our apiary in Vysočina
Cold processing of honey
A living artefact

Unlike ordinary honey, ours retains its full biological signature. The key is cold extraction from the comb and a temperature that never exceeds the natural 35 °C of a beehive. This preserves the enzymes, the scent of resin and the pure strength of Vysočina in every jar. The gentler the journey from the comb, the more authentic your ritual.

Ethical yield

The bees do most of the work; we interfere with their art as little as possible. We practise ethical yield — taking only the surplus, by hand and with respect. We generously leave the bees a substantial share of their own stores for natural development and healthy overwintering. We do not rush. We give the honey time to ripen fully in the comb before respectfully releasing it into a jar. Every batch is a unique impression of one particular summer and honest human work.

Ritual and tasting
A ritual of purity

We see honey as a living artefact that deserves mindful attention. Discover how to approach every spoonful, recognise the varied notes of spring orchards and honeydew, and understand why living honey should never be exposed to hot tea above 40 °C. Tasting our batches is a celebration of Vysočina's unhurried rhythm.

A journey without a cart

Honey from our seven colonies is not made on an assembly line. Its quantity is strictly limited by what the Vysočina countryside gives us each year. That is why you will find neither a conventional buy button nor a virtual shopping cart here. We believe in unhurried personal contact and traditional farm-gate sales. Our website is an invitation to a community that values uncompromising purity and patient craft.
