Standing beside the hives in secluded parts of Vysočina, what I notice most is the calm. SAD LES MED grew from a need to protect honey in its pure state and restore a discipline to the craft that demands absolute respect for the raw ingredient.
My work begins in places that form a natural barrier against the noise and bustle of the modern world. These are the secluded spots around Bratřice, where roads end and the peace of the unspoilt Vysočina landscape begins — the landscape the bees need for their harvest. Here I do not command; I listen to the rhythm of the season. When the buzzing in the fields falls silent in August, I know the year's work is done.
This work is honest physical effort in the demanding terrain of the orchards and meadows below Stražiště. It is the sharp smoke of the smoker and focused calm among the bees. True luxury takes time and patience — lifting heavy wooden hive boxes filled with liquid time. In that effort lies the certainty that the entire journey, from blossom to jar, has remained intact.
Integrity of the raw ingredient: why I do not take everything from the bees
I believe in ethical yield. For me, profit never comes before the vitality of the colony. I generously leave the bees a substantial share of their own honey stores for winter, so they retain their natural strength and immunity. This approach may be economically disadvantageous, but it is essential to the final artefact.
To preserve this biological strength for you too, I never heat honey above 35 °C when releasing it from the comb. That is the natural temperature of a bee's home. Above that threshold, honey flows faster and is easier to bottle, but loses its value — sensitive enzymes and delicate volatile compounds. I am in no hurry. I prefer to extract it slowly so it reaches you pure and unfiltered, carrying traces of pollen from the surrounding meadows and orchards.
A geography of calm: seclusion as the standard
I place hives for the bees' peace, rather than my own convenience. You will find them where miles of woodland and wild pasture are available, far from intensive farming. This deliberate seclusion in the unspoilt countryside of Vysočina ensures the honey remains a living elixir of the landscape.
My production is limited by what the landscape gives. If frost has destroyed the orchard blossom or the meadows have offered no honey, an empty space remains in my collection. That is the price of uncompromising purity. SAD LES MED batches are not assembly-line products: they are impressions of a particular year, its climate and a specific place. They are proof that honest craft has a place in the modern world.
An institution of honesty
My work rests on a simple principle: the integrity of the raw ingredient comes before convenience in processing. I respect the tradition of gentle craft, do not pressure-filter and do not reshape the character of honey to suit the market. I hand it over exactly as I respectfully released it from the comb. An artefact that brings the strength of Vysočina directly to your table.
