Where can I collect the honey?

We hand over honey in person at our apiary at Bratřice 23, Vysočina, always by prior arrangement. We do not send honey by courier. Before travelling, write to us so we can arrange a suitable time for your visit.

How should I store the honey?

Keep honey in a tightly closed jar, in a dry, dark place at a temperature below 25 °C. The specific best-before date is shown on the jar's label.

Our honey is not an anonymous commodity; it is a living impression of the Vysočina landscape at a particular moment. Unlike industrial honey, we work exclusively with a Raw & Cold-pressed approach — extracting honey cold to preserve its enzymes, antioxidants and delicate aromatic oils.

By keeping processing temperatures below 35 °C, we preserve diastase and invertase enzymes and pollen from wild raspberries, thyme and ancient linden trees. Honey carries a natural vitality and offers a complex flavour profile.

Where is the geography of silence of SAD LES MED's colonies?

Our colonies live in secluded corners of the Bohemian-Moravian Highlands near Bratřice and the forests below Stražiště hill (744 m above sea level). The mineral bedrock of gneiss and granite gives every batch a distinctive terroir.

What shapes the value of SAD LES MED's jars and its ethical yield?

We practise ethical yield — leaving the bees a generous share of their own food for natural development and overwintering instead of taking all their stores. We use traditional wooden hives treated with beeswax and gentle methods of care.

Why is there no shopping cart on SAD LES MED's website?

Our colonies do not produce to meet market demand. Our supply is naturally limited by what the Vysočina landscape gives us each year. We sell directly from our apiary in Bratřice. Our website is an invitation to meet us, rather than an online shop.

Why does honey set over time, and what is a creamed batch?

Accepted Answer

Crystallisation is a clear seal of authenticity and evidence that the honey has not been exposed to high temperatures. We create creamed batches by mechanically stirring the honey cold, without any heating — smoothing the sharp crystals into a velvety cream that retains 100% of its enzymatic strength.

What happens if frost or drought destroys the seasonal nectar flow?

We follow the Principle of the Empty Space. If spring frost destroys the blossom or the meadows give no nectar, that batch will have no entry in our journal. We never buy in honey or increase its volume with substitutes.

How should honey be served to preserve its living qualities?

Accepted Answer

Living honey should never be exposed to liquid hotter than 40 °C. We recommend enjoying a spoonful on its own as a quiet ritual, or pairing it with sourdough bread or mature cheese.

Eating pure honey from the unpolluted countryside of Vysočina is safe during pregnancy and beneficial for its high mineral and living enzyme content. If you have specific health conditions, we recommend consulting your doctor.
