In an age of mass production, honesty is the rarest value. For SAD LES MED, ethics are the foundation of our work. We believe honey's value is measured by the integrity of the whole process, rather than the number of jars bottled. Our beekeeping is a commitment to the landscape and a promise that every jar was made with absolute respect for the bees and for you.
Our principles begin with Ethical Yield. Unlike industrial operations that treat bees as production units, we take a gentle approach to harvesting. We remove only as much honey as the bees can safely spare, leaving a generous share of their own stores for natural development and healthy overwintering. A colony with enough of its own honey is naturally more vigorous and has strong immunity.
We build on traditional wooden hives, respect for the bees and gentle methods of care. Our hives are made from solid pine, treated only with beeswax and natural oils. We respect the natural state of the bees' home, where the purity of the materials directly affects the purity of the final ingredient.
Personal contact and farm-gate sales
We do not send honey through distribution networks in anonymous parcels. We believe in meeting in person and traditional farm-gate sales directly from our apiary in Bratřice. When you collect honey from us, you see the place it comes from and meet the person who has cared for the bees all year.
Every jar carries the mark of handwork, including a batch number and signature. This direct transparency is our way of respecting our visitors and the craft itself. Buying honey from our collection is a personal connection with the place and people behind it.
The promise of an empty space
We respect the dynamics of the seasons. If nature gives no honey in a particular year, if frost destroys the orchard blossom or drought is too severe, an empty space will remain in our collection. This natural cycle matters more to us than sales figures. SAD LES MED is not a commodity made to order. It is a rare seasonal gift that is either there or it is not. That rarity guarantees that what you hold is a true essence of life in Vysočina.

Standards for sustainable beekeeping in Bratřice
- Overwintering: we leave the bees at least 15 kg of their own honey (the basis of natural immunity)
- Hives and materials: 100% solid wood treated with wax (no plastic in contact with honey)
- Health care: no synthetic acaricides, only natural acids and herbs
- Handover: exclusively in-person farm-gate sales at our apiary in Bratřice
