Vysočina's living code: why does 35 °C matter to honey's strength?

Back to our story

Most honey undergoes a process that is efficient for logistics but fatal to its biology. For SAD LES MED, compromise is unacceptable. We preserve the living strength of Vysočina and its enzymatic integrity.

We make sure the journey from comb to jar leaves no technological trace. The key is 35 °C. Why this number? It is the natural working temperature the bees maintain inside the hive through tireless muscular effort. At this temperature, heat-sensitive enzymes, antioxidants and delicate aromatic oils remain at full strength. Once that threshold is exceeded, precious proteins begin to denature — the honey stays sweet, but its natural biological vitality and complex aromatic profile are lost.

This precision is not sterile laboratory science, but honest, uncompromising craft. It means hours in a cool honey room, where the air smells of beeswax and cold honey flowing through fine sieves. It means releasing nectar slowly, without any heating, and the physical effort of lifting heavy wooden hive boxes. Luxury lies in giving the raw ingredient exactly the time it needs to preserve its living structure.

Raw & Cold-pressed: a reflection of the bees' home

Raw & Cold-pressed — pressing or releasing the honey cold — is our promise in processing. We do not allow a single unnecessary degree of heat into the process. The result is honey in its pure, living form: an unfiltered artefact that retains its full biological signature, including microscopic pollen particles from wild raspberries and spring linden trees.

This approach demands endless patience. Cold-extracted honey flows slowly and resists gravity. We give it that time. The reward is a denser, more complex texture that leaves a deep, delicate herbal finish of Vysočina on the palate.

Crystallisation as a seal of authenticity

You often ask why our honey sets and changes texture over time. For us, the answer is the clearest evidence of quality: our honey is alive. Crystallisation is never a defect, but nature's unmistakable seal that the honey has not been altered by high temperatures or aggressive filtration.

For those who love velvety smoothness, we make creamed batches. This is mechanical care, rather than chemical treatment. We stir the honey slowly and cold for several days, letting the sharp crystals smooth one another. The result is a pearlescent cream that retains 100% of its enzymes while acquiring a texture that melts on the palate like a precious jewel.

A closer look at cold extraction and creaming

  • Batches: 02/26 – Blossom honey / 01/26 – Creamed honey from Bratřice
  • Extraction time: June 2026 (the peak spring nectar flow from orchards and meadows)
  • Processing method: Raw & Cold-pressed (maximum extraction temperature 34.8 °C)
  • Creaming technique: patient mechanical stirring without heat — controlled crystallisation that smooths crystals into a velvety cream
  • Enzymatic value: high diastase and invertase activity, with the pollen profile fully preserved
  • Collection status: the batch is available for farm-gate enquiries

From blossom to jar: the value of craft

Every jar of SAD LES MED is the result of choosing not to take shortcuts. We believe that honey from places as pure as the orchards and meadows near Bratřice deserves nothing but respect. Open our jar and you will sense more than sweetness: the clean air of Vysočina and the strength that Vladimír Mařinec has carefully protected for your moment of calm.
